[SimplifyMe] Smoked Herb {Tomatoes}

 

SMOKED HERB TOMATOES
MAKES 6 SERVINGS.

8 tomatoes, halved, seeded
Salt and Pepper
4 sprigs thyme
2 cups hickory chips
Two 9" round disposable aluminum pie pans

Soak wood chips in water 1 hour, then prepare grill for smoking. Season tomatoes with salt and pepper. Divide herbs between pie pans, then add tomatoes, cut side down. Once grill reaches 250 degrees, place pans with tomatoes on cooler side of grill. CLOSE grill, let smoke until tomatoes are tender 40 min. If using a gas grill, turn off flame, let tomatoes sit 10 min. this is not necessary if using charcoal. Remove from grill, serve hot or at room temp. SERVE & ENJOY...
