RHUBARB BERRY COMPOTE
MAKES 4 CUPS.
Combine 2 pounds rhubarb, cut into pieces, 1 pound strawberries, quartered, 1 cup sugar, 1/4 cup apple juice and 1 tbs orange zest in a pot, bring to a boil. Simmer until rhubarb breaks down and mixture thickens. Stir in 1/2 tsp vanilla. SERVE on toast, pancakes or ice cream & ENJOY...
