QUICK VEGGIE SOUP
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
3 tbs oil
2 leeks, trimmed, sliced
2 potatoes, peeled, chopped
2 carrots, chopped
2 cloves garlic, sliced
Salt and Pepper
6 cups vegetable stock
1 cup peas
1/4 cup tarragon, chopped
5 cups torn lettuce
1 lemon, juiced
In a pot, heat oil. Add leeks, potatoes, carrots and garlic, season with salt and pepper. Cook until vegetables soften. Add stock, peas and tarragon. Simmer until peas are tender. Add lettuce, stir until wilted. Stir in lemon juice. SERVE & ENJOY...
