[SimplifyMe] Red-Velvet {Shakes}

 

RED-VELVET SHAKES
MAKES 8 SERVINGS.

3/4 cup canola oil
1/2 cup lowfat buttermilk
1 egg
4 tsp red food color
1/2 tsp vanilla
1 cup cake flour
3/4 cup sugar or Splenda
1 tsp cocoa powder
1/4 tsp salt
3 pints no sugar added vanilla ice cream
4 cups lowfat milk
8 oz pkg lowfat cream cheese
Whipped cream

Heat oven to 325 degrees. Line 12 cup muffin pan with baking liners. In a bowl, whisk oil, buttermilk, egg, food color and vanilla. In another bowl, whisk flour, sugar cocoa and salt. Add dry ingredients to wet ingredients, stir to blend. Divide among muffin cups. Bake until done 30 min. Let cool. *IN a blender, puree ice cream, milk and cream cheese. Add 4 crumbled cupcakes, pulse to blend. Divide among 4 tall glasses. Repeat with remaining ice cream, milk, cream cheese and 4 cupcakes. Garnish with whipped cream and cupcake crumbs from a remaining cupcake. SERVE & ENJOY...
