COCONUT-LIME FLOATS
MAKES 8 SERVINGS.
1 cup lime juice
1 cup agave nectar
3/4 tsp lime zest
2 liters seltzer
2 pints coconut ice cream
Toasted coconut
In a bowl, stir lime juice, agave and zest until agave dissolves. Divide lime syrup and seltzer among 8 tall glasses, stir to combine. Add 2 scoops ice cream to each glass, garnish with coconut and more zest. SERVE & ENJOY...
