PORK-CHOPS WITH GRITS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 tbs each flour and chopped parsley
2 tsp oil
4 pork chops
Salt and Pepper
2 onions, sliced
1 cup chicken broth
1 bay leaf
1 1/2 tsp balsamic vinegar
3/4 cup quick cooking grits
1/2 cup shredded cheddar cheese
Heat oil in a skillet. Season pork with salt and pepper, cook until browned. Transfer to a plate. *Add onions to skillet, season. Cook until lightly browned, stir in flour, cook 2 min. Add broth and bay leaf. Cook until thickened. Add vinegar, return pork to skillet to warm through. *Bring 2 1/4 cups water to a boil in a pan. Add grits and salt, cook until thickened. Stir in cheese. *Remove pork from skillet discard bay leaf, stir parsley into pan sauce. SERVE pork with grits. Top with pan sauce & ENJOY...
