LIME HERB CHICKEN
MAKES 8 SERVINGS.
2 tbs minced cilantro or parsley
1 tbs minced oregano
1 1/2 tsp minced garlic
1 tsp paprika
1 lime, zested, juiced
4 tbs honey mustard dressing
2 tbs tequila or chicken broth
4 pound roasting chicken
Heat grill. In bowl, combine first 4 ingredients and 2 tsp lime zest, season. In separate bowl, mix 2 tbs lime juice, dressing, tequila and 1/2 herb mixture. Spread remaining herb mixture under skin of chicken. Brush outside of chicken with 1/2 dressing mixture. *Place chicken on grill, grill until done, basting with remaining dressing mixture. Let sit 10 min. before carving. SERVE & ENJOY...
