[SimplifyMe] Lemon Mustard {Chicken}

 

LEMON MUSTARD CHICKEN
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

1 1/2 pounds potatoes, peeled, quartered
Salt and Pepper
1/2 cup sour cream
3 tbs unsalted butter
2 tbs chopped chives
8 skin on bone in chicken thighs
1 tbs Dijon mustard
Juice of 1 lemon
2 cloves garlic, grated
1 tbs oil
1 tsp chopped thyme
1 bunch broccoli, trimmed

HEAT oven to 450 degrees. Put potatoes in a pan, cover with water, season. Bring to a boil, simmer until tender. Reserve 1/4 cup cooking water, then drain potatoes, return to pot. Add sour cream, butter and cooking water, mash. Stir in chives, season, keep warm. PLACE chicken on a baking sheet, season. Bake 20 min. remove from oven. Mix mustard, juice, garlic, 2 tsp oil and thyme, brush on chicken. Toss broccoli with remaining oil in middle of pan, season. Bake until chicken is cooked through and broccoli is tender 10 min. SERVE with potatoes & ENJOY...
