HAND CUT FRENCH FRIES
MAKES 8 SERVINGS.
1 tsp olive oil
4 cloves garlic, chopped
1 tbs chopped thyme
1/2 cup light mayonnaise
1/2 cup ketchup
1 tsp curry powder
12 cups canola oil
3 pounds potatoes, peeled, cut into sticks, placed in cold water
Salt
Heat olive oil in a skillet. Stir in garlic and thyme, cook 1 min. stir into mayo. Transfer to a bowl, refrigerate. *To skillet, add ketchup and curry. Bring to a simmer, cook 1 min. Transfer to a bowl, refrigerate. *Heat canola oil in a pot. Dry potatoes with paper towels. Fry potatoes until golden brown. Remove to paper towels, sprinkle with salt. SERVE hot with mayo mixture and curry ketchup & ENJOY...
