DARK-CHOCOLATE FLOURLESS CAKE
MAKES 8 SERVINGS.
1 cup pomegranate juice
3/4 cup sugar
1 tsp vanilla
1 pound bittersweet chocolate, chopped
1/2 cup butter, cubed
6 eggs
GANACHE---
6 oz bittersweet chocolate, chopped
3/4 cup heavy cream
Line bottom of a buttered springform pan with parchment, butter paper and sides of pan. Wrap foil around pan. In a pan, bring juice and sugar to a simmer, cook until syrupy. Remove from heat, stir in vanilla. *In a pan, melt butter and chocolate. Remove from heat, stir in pomegranate mixture. Cool. Whisk eggs into chocolate mixture. Pour into pan. Place in a baking pan, add 1" of water to larger pan. *Bake at 350 degrees for 50 min. or until done. Remove pan from water, cool. Remove sides of pan. Place cake on a platter. FOR GANACHE---Place chocolate in a bowl. In a pan, bring cream to a boil. Pour over chocolate, whisk until smooth. Cool slightly. Pour over cake. Let stand until set. SERVE & ENJOY...
