ROASTED CAULIFLOWER WITH DATES AND PINE NUTS Makes 4 servings. 1/2 cup pitted dates, coarsely chopped 1/3 cup pine nuts Salt and Pepper 1 clove garlic, minced 4 tbs unsalted butter or margarine 1 head cauliflower, cut into florets Heat oven to 425°. Spread the cauliflower on a baking sheet and season with salt and pepper. Transfer to the oven and roast, tossing once until golden brown at the edges, 20 min. Put the butter in a skillet. Once its melted, add the pine nuts and cook until they are lightly golden brown, 5 min. -Add the garlic and dates and continue cooking until they are softened, 3 min. more, season with salt.
