[SimplifyMe] Roasted Garlic (Potatoes)---w/ Rosemary

 

ROASTED POTATOES WITH GARLIC & ROSEMARY             Makes 3 cups.

Salt and Pepper
1 tbs chopped rosemary
1/4 cup olive or vegetable oil
2 pounds potatoes, unpeeled, cut into large chunks
5 cloves garlic, smashed

Heat oven to 450°. Bring a pot of salted water to a boil. Heat oil, garlic and rosemary on a baking sheet on stovetop. Do not allow garlic to brown. Boil potatoes in water for 1 min. transfer potatoes to baking sheet on stovetop, stir to coat with oil.
-Transfer potatoes to the oven and roast 20 min. toss them then roast until cooked through, browned and crisp, 10 min. more. Season with salt and pepper, then SERVE...
