[SimplifyMe] Banana Black (Cake)---w/ Nuts

 

BANANA BLACK CAKE                            Makes 25 servings.

A tube or Bundt cake containing walnuts, dates, bananas, raisins and blackberry jam.

1 cup raisins
2 tsp baking soda
1 1/2 cups blackberry jam
1 cup each sugar and light brown sugar
2 sticks unsalted butter
1 tsp each nutmeg, cinnamon and allspice
1 cup unsifted whole wheat flour
1 1/2 cups pitted dates
1/3 cup buttermilk
5 bananas
4 eggs
2 tsp vanilla
1/2 tsp each salt, ground cloves and ginger
1/4 cup unsweetened cocoa powder
2 1/4 cups sifted all purpose flour
3 cups walnuts

Heat oven to 300°. Butter a tube pan. Line with parchment and butter the paper. Chop 2/3 cup of the walnuts finely and turn into the pan. Distribute loose nuts on the bottom of the pan. Chop remaining nuts less fine. Cut dates into pieces. Toss with 1 tbs sugar. Sift together flours, cocoa, spices and salt, then set aside.
-In a bowl, beat butter until soft. Beat in vanilla and both sugars. Beat eggs then beat in jam. Coarsely mash bananas and beat into batter. Stir baking soda into buttermilk until baking soda dissolves. Add to batter, add the sifted ingredients beating until incorporated.
Stir in nuts, dates and raisins.
-Turn the mixture into the pan. Cover the top with foil and place the covered pan in the oven. Place a shallow pan of hot water on the lowest rack. Bake 1 hour remove foil and bake 1 1/2 hours more or until done. Let cake stand 20 min. before removing from pan. Chill and cut into thin slices, then SERVE...
