HERB CRUSTED PORK CHOPS WITH BROCCOLI AND ONIONS Makes 4 servings. Salt and Pepper 1/4 onion, thinly sliced 4 pork chops 3 tbs chopped flat leaf parsley 3 tbs olive or vegetable oil 1 bunch broccoli, cut into florets 3 tbs grainy mustard 2 tbs grated Parmesan cheese 1 1/2 cups whole wheat breadcrumbs Heat oven to 425°. Place a greased rack on a foil lined baking sheet. In a skillet, heat 2 tbs oil. Add breadcrumbs and toast. Transfer to a bowl, stir in parsley and cheese. Brush pork with mustard and coat with breadcrumb mixture. Arrange on the rack and bake until cooked through, 25 min. -In a skillet, heat remaining oil. Add onion and cook until slightly softened. Add broccoli, season with salt and pepper and toss. Add 1/2 cup water, cover and simmer until crisp tender. SERVE with chops... |
