ROASTED CAULIFLOWER QUICHE WITH GARLICKY GREEN BEANS Makes 4 servings. Quiche is like a egg pie, this one contains cauliflower, cheese and parsley. It is served with green beans that are topped with garlic breadcrumbs. 1 pound green beans 1/2 cup + 1 tbs grated Parmesan cheese 8 eggs 5 cloves garlic, 3 thinly sliced and 2 finely chopped 4 1/2 tbs olive or vegetable oil 3 tbs chopped parsley 3/4 cup cottage cheese 1 cup coarse whole wheat breadcrumbs Salt and Pepper 1 head cauliflower, cut into slices Heat oven to 425°. Grease a pie plate. On a foil lined baking sheet, toss cauliflower with 1 1/2 tbs oil, season with salt and pepper and arrange in an even layer. Roast until tender and lightly browned, 15 min. -In a skillet, heat 2 tbs oil. Add sliced garlic and cook until lightly golden. Add breadcrumbs, season with salt and pepper and toast until golden, transfer to a plate. Wipe out skillet. -In a bowl, beat eggs. Stir in cottage cheese, 1/2 cup Parmesan, parsley and chopped garlic, season with salt and pepper. Spread half of the garlic breadcrumbs in the pie plate and top with cauliflower. -Pour on the egg mixture, sprinkle with remaining Parmesan. Bake until set and browned, 25 min. Let cool 10 min. before slicing. In skillet, heat remaining oil. Add beans and 1/4 cup water, season with salt and pepper. Cover and cook until crisp tender.
