| LEMON KISSED EGG NESTS Makes 16 servings. These cupcakes are really cute, they have green nests on top of them and cute little decorated eggs too. 1 box pound cake mix 1 1/2 cups vanilla frosting 1 cup white chocolate chips, melted Green, red, yellow and blue liquid food coloring 1 cup lemon curd Heat oven to 350°. Prepare cake mix according to package directions. Pour batter into 16 wells of lined muffin pan. Bake 15 min. Let cool. Press tip of pastry bag filled with curd into cupcakes, squeeze. In bowl, blend 3/4 frosting and green food coloring, spoon into pastry bag with star tip. Pipe nests. -Color remaining frosting as desired. Spoon melted chocolate into plastic bag, seal and snip corner. Pipe eggs onto lined baking sheet. Let sit 10 min. Decorate eggs with colored frosting, place on cupcakes, then SERVE... |
