[SimplifyMe] Baked Salmon (Fillets)---w/ Vegetables

 

SALMON WITH LEMON DRESSED VEGETABLES       Makes 4 servings.

Baked salmon fillets served with mushrooms, asparagus, potatoes, and parsley.

Grated peel and juice of 1/2 lemon
2 tbs chopped flat leaf parsley
1/2 bunch asparagus, cut crosswise into thirds
3 tbs olive or vegetable oil
1 clove garlic, finely chopped
4 salmon fillets
Salt and Pepper
1/2 pound potatoes, quartered lengthwise
2 cups white mushrooms, halved

Heat oven to 425°. In a skillet, heat 1 1/2 tbs oil. Add potatoes and mushrooms, season with salt and pepper and cook until lightly browned. Transfer to oven and roast 10 min. Stir in asparagus and roast in oven until asparagus is crisp tender, 3 min.
-Rub salmon all over with 1 tbs oil and season with salt and pepper. Arrange salmon on a foil lined baking sheet, roast until opaque in the center, 10 min. In a bowl, whisk together parsley, garlic, lemon peel, lemon juice and remaining oil, season with salt and pepper. Toss with roasted vegetables and SERVE with salmon...
