HAM, SPINACH AND MUSHROOM PASTA WITH WALNUT PESTO Makes 4 servings. Bowl of pasta with ham, mushrooms, spinach, garlic, walnuts, parsley and lemon. Salt and Pepper 1/2 cup coarsely chopped parsley 3 cloves garlic 2 cups white mushrooms, thinly sliced 1/4 cup + 2 tbs olive or vegetable oil Grated peel and juice of 1/2 lemon 1 cup walnut pieces, toasted 6 oz bag spinach 8 oz ham, cut into cubes 1 pound whole wheat penne rigate pasta or other tube pasta In a pot of boiling salted water cook pasta until al dente. Drain reserving 1 cup of the pasta cooking water and return pasta to pot. In a skillet, heat 2 tbs oil. Add ham and cook until golden. Push ham to the side, add mushrooms and cook until lightly colored. Stir in spinach and cook until wilted. -Using a food processor or blender, mince garlic. Add walnuts, parsley and lemon peel and process until finely chopped. Add lemon juice and remaining oil, season with salt and pepper. Process to form a paste. -Add walnut pesto and 1/2 cup pasta water to pasta, toss to coat. Stir in ham mixture, adding more pasta water if needed, season with salt and pepper, then SERVE... |
