PINEAPPLE UPSIDE DOWN CORN CAKE Makes 8 servings. 2 eggs 1/4 tsp salt 3/4 cup stone ground whole grain cornmeal 1/2 pineapple, peeled, quartered lengthwise, cored, cut crosswise into 1/4" thick slices 3 tbs unsalted butter or margarine, melted 2/3 cup unsweetened applesauce 1 1/2 tsp baking powder 3/4 cup flour 1/4 cup + 3 tbs light brown sugar or Splenda Heat oven to 350°. In a cast iron skillet, heat 1 tbs butter and 3 tbs brown sugar until melted. Add pineapple and cook until tender, 7 min. Arrange pineapple decoratively in the pan. In a bowl, combine flour, cornmeal, baking powder, salt and remaining brown sugar. -In a bowl, combine applesauce and remaining butter. Beat in eggs. Make a well in the center of the flour mixture, add the applesauce mixture and stir until incorporated. Spread the batter on top of the pineapple in the skillet. Bake until springy 20 min.
