[SimplifyMe] Yuca {Fries} with Chimichurri

 

YUCA FRIES WITH CHIMICHURRI---Yuca is the root of a plant and chimichurri is a parsley sauce.
MAKES 8 SERVINGS.

3 cloves garlic, 1 whole, 2 chopped
1 bay leaf
Salt and Pepper
3 pounds yuca, peeled, cut into fries
1 bunch parsley, chopped
1 onion, chopped
2 tsp lemon zest
2 tbs each lemon juice and red wine vinegar
1/4 tsp each cumin and crushed red pepper
3/4 cup oil
Oil for frying

Place a rack on a baking sheet. Bring a pot of water to a boil. Add whole clove garlic, bay leaf and salt, return to boil. Add yuca, cook until tender, transfer to rack. Let dry 15 min. *Place parsley, onion, chopped garlic, zest, juice, vinegar, cumin and red pepper in a processor, pulse until mixture is chopped. Season with salt. With processor running, add oil. Transfer to a container, refrigerate. *In a skillet, heat 2" oil, fry yuca until golden brown and crisp. Transfer fries to rack to drain, season with salt. SERVE immediately with chimichurri & ENJOY...
