[SimplifyMe] Veggie Pork {Casserole}

 

VEGGIE PORK CASSEROLE
MAKES 4 SERVINGS.

3 tbs oil
6 oz ground pork
Salt and Pepper
1 clove garlic, chopped
4 oz mushrooms, stemmed, chopped
3 green onions, chopped
1/2 cup breadcrumbs
14.5 oz can diced tomatoes
1/4 cup chopped parsley
3/4 cup cottage cheese
1 1/4 cups shredded Mexican cheese blend
1 yellow squash, halved crosswise, sliced lengthwise

Heat oven to 375 degrees. Heat oil in a skillet. Add pork, season, cook until browned. Add garlic, mushrooms, half the green onions and 2 tbs breadcrumbs, cook 3 min. Add tomatoes, half the parsley and 1/3 cup water, cook until thickened. *Combine cottage cheese, 3/4 cup Mexican cheese and remaining parsley in a bowl. Sprinkle 3 tbs breadcrumbs in a baking dish. Top with half the squash, season. Top with two thirds pork sauce and cheese mixture. Add remaining squash, season. Add remaining breadcrumbs, pork sauce and Mexican cheese. *Bake until cheese melts and squash is tender 20 min. then broil until golden. Top with remaining green onions. SERVE & ENJOY...
