SPINACH-STUFFED CHICKEN
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
3 tbs olive oil
4 cloves garlic, minced
16 oz bag frozen chopped spinach, squeezed dry
Salt and Pepper
4 boneless skinless chicken breast halves
1/4 tsp poultry seasoning
3/4 cup white wine
In a skillet, warm 1 tbs oil. Add garlic, cook 30 seconds. Add spinach, cook 2 min. Season with salt and pepper, remove from heat. Slice chicken breasts almost in half horizontally, open like a book. Sprinkle with poultry seasoning, salt and pepper. *SPOON 1/4 cup filling onto breasts. Roll lengthwise over filling, secure with toothpicks. Warm 2 tbs oil in a skillet. Add chicken, cook until golden. Add wine, simmer until cooked through. Remove chicken to a platter, tent with foil. Boil sauce until thickened. Remove toothpicks from chicken.
