[SimplifyMe] Seeded Squash {Bread}

 

SEEDED SQUASH BREAD
MAKES 8 SERVINGS.

2 3/4 cups cubed peeled butternut squash
1/4 oz pkg yeast
1/3 cup warm milk
2 tbs warm water
1/2 cup pumpkin seeds or sunflower kernels
1/4 cup butter
1 egg
3 tbs brown sugar
1/2 tsp salt
4 cups flour
TOPPING---
1 egg
1 tbs water
1/4 cup pumpkin seeds or sunflower kernels

Place squash in a pan, cover with water. Bring to a boil, cook until tender. Drain and mash squash, cool. In a bowl, dissolve yeast in milk and water. In a bowl, combine seeds, butter, egg, brown sugar, salt, squash, yeast mixture and 2 cups flour, beat 3 min. Stir in enough flour to form a soft dough.  *Turn onto a floured surface, knead until elastic. Place in a greased bowl, let rise until doubled. Punch dough down. Turn onto a floured surface, divide into thirds. Shape each into a 26" rope, braid ropes. Transfer to a greased baking sheet, form into a circle. Let rise until doubled. FOR TOPPING---Beat egg and water, brush over braid. Sprinkle with seeds. Bake at 350 degrees for 23 min. or until golden brown. SERVE & ENJOY...
