PINK ROSE JAM
MAKES 2 1/2 CUPS.
2 1/2 cups water
4 cups pink rose petals
3 cups sugar
1/4 cup lemon juice
2 tbs rose water
1/4 tsp rose extract
3 oz liquid pectin
In pan, heat water to boiling. Remove from heat, add rose petals. Let stand 4 hours to steep. Strain water and petals through a sieve set over bowl. Discard petals, return rose infused water to pan. STIR in sugar, lemon juice, rose water, and rose extract. Heat to boiling, boil 5 min. Stir in pectin, boil 5 min. Remove from heat, pour jam into sterilized canning jars. Top with lids to seal, let cool. Refrigerate up to 3 weeks. SERVE & ENJOY...
