ORZO, VEGGIE & PORK
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
Salt
1 1/4 pounds pork tenderloin
2 zucchini, halved lengthwise and crosswise
3 tbs oil
Grated zest and juice of 1 lemon, plus wedges
1 1/2 tsp cumin
1 1/2 tsp coriander
1/4 tsp cayenne
1 cup orzo
2 tomatoes, chopped
3 tbs chopped parsley
Bring a pot of salted water to a boil. Butterfly pork. Open pork like a book, flatten slightly until 1/2" thick. Put pork and zucchini in a bowl. Add 2 tbs oil, zest, cumin, coriander, salt and cayenne, toss, let sit 10 min. ADD orzo to boiling water, cook as label directs. Drain. Transfer to a bowl, add tomatoes, parsley, juice, remaining oil and salt, toss. Heat a grill. Grill pork and zucchini until pork is cooked through and zucchini is tender. Slice pork. SERVE with zucchini, orzo and lemon wedges & ENJOY...
