MINI PIMIENTO MEATBALLS
MAKES 24 MEATBALLS.
1 pound ground beef
4 oz jar pimientos, drained, chopped
1/2 cup breadcrumbs
1 egg, beaten
Salt
2 tbs oil
2 tbs tomato paste
2 1/2 cups chicken broth
1 tbs brown sugar
1 tsp red wine vinegar
Put beef in a bowl. Add pimientos, breadcrumbs, egg, and salt, mix. Form into 24 meatballs. Heat oil in a skillet. Add meatballs, cook until browned, transfer to a plate. Add tomato paste to skillet, cook until darkened. *Add broth, brown sugar and vinegar, cook until sugar dissolves. Return meatballs to skillet, simmer spooning liquid over meatballs until meatballs are cooked through. Transfer to a platter. SERVE & ENJOY...
