MEXICAN-GRILLED CORN
MAKES 8 SERVINGS.
8 ears corn, with husks
3 tbs unsalted butter, melted
2/3 cup light mayonnaise
1 tbs chili powder
1/2 cup grated Parmesan cheese
2 limes, cut into wedges
Salt and Pepper
Pull down husks, remove silk. Place husks back over corn, soak in bowls filled with water 30 min. Heat a grill. Drain corn on paper towels, pull down husks, brush kernels with butter. Place husks back over corn, tie ends with twine. *ARRANGE corn on grill, cook until tender. Cut away twine, pull down husks. Spread mayo on each ear, sprinkle with chili powder and Parmesan. SERVE with limes, salt and pepper & ENJOY...
