MEATLESS SEVEN LAYER BURRITOS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
2 cans 16 oz each spicy vegetarian refried beans
3/4 cup vegetable stock
2 tsp hot sauce
1 tsp cumin
1 onion, chopped
3 jalapenos, seeded, chopped
1 lemon, juiced
1 clove garlic, grated
2 avocados, pitted, peeled
3 tomatoes, seeded, chopped
4 large flour tortillas
3/4 pound pepper Jack cheese, shredded
Chopped lettuce
1 cup lowfat sour cream
1 cup pimiento stuffed green olives, chopped
In a pan, heat beans, stock, hot sauce and cumin until warm. In a bowl, combine half the onion and jalapenos with juice and garlic. Season with salt, let stand 10 min. Mash in avocados to make guacamole. *IN a bowl, toss remaining onion and jalapenos with tomatoes to make salsa, season with salt. Heat a skillet. Add tortillas, cook until beginning to blister. Spread one quarter of the beans in center of one tortilla, then top with one quarter of the cheese, lettuce, guacamole, salsa, sour cream and olives. *ROLL up, burrito style. Repeat with remaining tortillas and fillings. Cut burritos in half, divide among plates. SERVE & ENJOY...
