LOW-CALORIE JAMBALAYA SOUP
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
3 tbs olive oil
3 chicken sausages, sliced
4 green onions, chopped
1 stalk celery, chopped
1 bell pepper, chopped
3 cloves garlic, chopped
1 tsp Cajun seasoning
4 cups low sodium chicken broth
1 cup long grain brown rice
14 oz can no salt added diced tomatoes
1 bay leaf
Salt
Cornbread
Heat a pot, add oil. Add sausages, cook until lightly browned. Transfer to a plate. Add green onions, celery and bell pepper to pot. Cook until softened. Add garlic and Cajun seasoning, cook 1 min. ADD 1 1/2 cups water, broth, rice tomatoes and bay leaf. Bring to a simmer, cook until rice is tender. Return sausages to pot, season with salt. Discard bay leaf. SERVE with cornbread & ENJOY...
