HOMEMADE GRAHAM CRACKERS
MAKES 36 CRACKERS.
1 1/2 cups all purpose flour
1 cup wheat flour
1/2 tsp each baking soda and salt
1/4 tsp cinnamon
1/4 cup milk
2 tsp vanilla
1/2 cup butter
3/4 cup brown sugar
3 tbs honey
In bowl, whisk first 5 ingredients. In cup, combine milk and vanilla. In another bowl, beat butter, brown sugar and honey until fluffy. Add flour mixture alternately with milk mixture. Beat until mixture forms smooth dough. *Transfer half dough to piece of flour dusted parchment, shape into flat disk, dust disk with flour, cover with another piece of parchment, roll out between parchment to 1/8" thick. Transfer dough between parchment to cookie sheet. Repeat with remaining dough. Refrigerate 1 hour. * With 2 1/2" fluted square cookie cutter, cut dough into squares. Transfer to 2 parchment lined cookie sheets, prick each cracker. Refrigerate 30 min. Heat oven to 350 degrees. Bake crackers 20 min. Let cool. SERVE & ENJOY...
