GIANT S'MORES CAKE---Looks like one gigantic s'mores.
MAKES 8 SERVINGS.
17.5 oz bag sugar cookie mix
3/4 cup ground graham crackers
11 oz jar hot fudge topping
1.5 quart rectangular carton vanilla ice cream
6 egg whites
Pinch of cream of tartar
1 cup sugar
Heat oven to 350 degrees. MAKE THE LARGE GRAHAM CRACKERS---Discard 3/4 cup of cookie mix. Prepare remaining mix as directed for cut out cookies, adding ground graham crackers. Divide dough in half. Roll out each piece of dough into a 9 1/2" square on separate sheets of parchment, transfer dough and parchment to 2 baking sheets. BAKE graham cracker cookies until golden 15 min. While warm, trim edges to make 9" squares. Score a perforated line across middle of each cookie, then make small holes like graham crackers have. Let cool. Spread fudge sauce into a wavy pool on 1 cookie. Transfer to freezer. LET ice cream soften slightly, then cut off carton, place block of ice cream on its side on a piece of plastic wrap. Cover with more plastic, press ice cream to flatten slightly. Freeze until firm. MAKE THE MERINGUE---Beat egg whites and cream of tartar until foamy, then beat in sugar until stiff peaks form. Remove plastic, set ice cream on top of fudge covered cookie, cover ice cream with a smooth layer of meringue. USE a torch to brown meringue, then press other graham cracker cookie on top. Freeze until ready to serve, then let soften slightly, then slice. SERVE & ENJOY...
