FISH FRUIT SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1/2 pound potatoes, sliced
Salt and Pepper
3 oz cream cheese
Juice of 1 lemon
1 tbs horseradish
1 tbs plus 1 tsp oil
1 pound skin on salmon fillet
1 head chopped lettuce
6 radishes, sliced
1 apple, sliced
3/4 cup chopped dill and chives
Put potatoes in a pan, cover with water, season with salt. Bring to a boil, simmer until tender. Drain. Heat a grill. MAKE DRESSING---Combine 1/4 cup water, cream cheese, juice, horseradish, 1 tbs oil, salt and pepper in a blender, puree until smooth. Brush skin side of fish with remaining oil. Transfer to grill, skin side down, cook until opaque, transfer fish to a plate, discard skin. Flake fish into pieces. TOSS potatoes with lettuce, radishes, apple, herbs and dressing in a bowl. Season with salt and pepper. Add fish, toss. SERVE & ENJOY...
