EASY BAKED FISH MEATBALLS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
2 pounds fish, skin removed, cut into pieces
Salt and Pepper
1 egg
3/4 cup panko breadcrumbs
1/2 cup parsley
Zest of 1 large lemon
2 cloves garlic
1 tomato, seeded, chopped
3 tbs grated onion
2 tbs olive oil
Lemon wedges
Heat oven to 425 degrees. In a processor, pulse fish until ground. Transfer to a bowl, add salt and pepper. Mix in egg and panko. On a cutting board, make a gremolata by chopping together parsley, zest, and garlic. Mix gremolata, tomato, onion and oil into fish mixture. *ROLL fish mixture into balls, arrange on a baking sheet lined with parchment. Bake until meatballs are cooked through and lightly browned. Squeeze lemon wedge over meatballs. SERVE & ENJOY...
