CUTE DEVILED-EGG CAKE---Cake that looks like a giant deviled-egg.
MAKES 10 SERVINGS.
FOR CAKE---
2 boxes white cake mix
4 freeze dried strawberries, crushed
Two 3" pieces green sour straws
FOR FROSTING---
1 1/2 cups sugar
1/2 tsp cream of tartar
Pinch of salt
3 egg whites
Yellow food coloring
Coat a 1 1/2 quart and a 2 1/2 quart bowl with cooking spray. Prepare cake mixes, divide batter between bowls. Bake at 325 degrees, 45 min. for small bowl and 55 min. for large bowl. Let cool, then remove from bowls. MAKE FROSTING---Heat sugar with cream of tartar, salt, and 2/3 cup water in a pan until dissolved. Beat egg whites until frothy. Beat in hot sugar mixture, then beat until stiff peaks form. *Remove 2 cups frosting to a bowl, fold enough food coloring to make a bright yellow egg yolk, set aside. Set cakes rounded side down. Trim tops so cakes sit at the same height. Flip cakes over, slice off a 3" piece from each one, reserve trimmings. *Line up cut sides of cakes, then trim the sides of the smaller cake to make an oval shape. Flip cakes over. Use a little frosting to stick the cakes together, then cover completely with frosting. Freeze 20 min. Cover with remaining white frosting. *Crumble reserved cake trimmings, mix with enough of the yellow frosting to moisten. Clump mixture together, mound on the wider end of the cake to form the YOLK. Put remaining yellow frosting in a pastry bag fitted with a large star tip. Pipe in a spiral over cake mound. Sprinkle with crushed strawberry to resemble PAPRIKA, top with sour green straw to resemble CHIVES. SERVE & ENJOY...
