CREAMY PICKLE POTATO SALAD
MAKES 8 SERVINGS.
2 1/2 pounds potatoes, cut into chunks
5 slices bacon, chopped
3/4 cup mayonnaise
1 tbs spicy brown mustard
2 dill pickles, chopped
1 clove garlic, crushed
1/2 tsp sugar
3 stalks celery, sliced
2 cups corn kernels
2 green onions, sliced
In pot, combine potatoes, salt and enough water to cover, heat to simmering. Cook until tender. In skillet, cook bacon until crisp. Transfer bacon to plate. Put mayo, mustard, pickles, garlic, sugar and salt in a bowl. Whisk to combine, set dressing aside. Drain potatoes, toss with dressing. Let cool 15 min. fold in bacon, celery, corn and green onions. SERVE & ENJOY...
