COCONUT LEMON BARS
MAKES 8 SERVINGS.
CRUST---
2 egg whites
1 tbs sugar
2 cups sweetened flaked coconut
LEMON CURD---
1 1/2 cups sugar
1/2 cup flour
2 tbs cornstarch
1/2 tsp salt
4 egg yolks
1 tbs grated lemon zest
1 cup lemon juice
MARSHMALLOW FROSTING---
4 egg whites
1/2 cup sugar
1/2 tsp cream of tartar
1/2 tsp vanilla
Heat oven to 375 degrees. Coat an 8" square pan with cooking spray. Line pan with parchment, leaving a overhang. Spray paper. MAKE CRUST---In a bowl, beat egg whites and sugar until frothy, mix in coconut. Spread mixture into pan, bake until golden brown 20 min. MAKE LEMON CURD---In a bowl, whisk together sugar, flour, cornstarch and salt. Add yolks, zest and juice, whisk to combine. Spread over crust, bake until set 35 min. Let cool, refrigerate until chilled. MAKE FROSTING---In a bowl, whisk together egg whites, sugar and cream of tartar. Set bowl over a pan of simmering water, cook until sugar is dissolved. Remove from heat, beat until soft peaks form. Beat in vanilla. Spoon frosting over lemon curd. Using the overhangs, transfer to a cutting board, cut into squares. SERVE & ENJOY...
