CLAM SAUCE PASTA
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
Salt
12 oz pasta
3 tbs oil
3 cloves garlic, sliced
2 anchovy fillets
1/2 tsp red pepper flakes
1/2 tsp dried oregano
1/2 cup white wine or broth
28 oz can whole tomatoes, crushed
1 1/4 pounds clams
12 oz chopped clams
1/2 cup chopped parsley
Bring a pot of salted water to a boil. Add pasta, cook as label directs, drain, set aside. Heat 2 tbs oil in a skillet. Add garlic, anchovies, pepper flakes, oregano and salt, cook until garlic is golden. Add wine, cook until reduced by half. *Add tomatoes, cook until sauce thickens. Add clams, cook until they begin to open. Add chopped clams and parsley, continue cooking until clams are fully opened, discard any that do not open. Add pasta and remaining oil, toss. Season. SERVE & ENJOY...
