CITRUSY FISH TACOS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
8 oz jar salsa
1 cup canned black beans, drained
1 cup cooked corn
2 tbs minced chives
1.5 oz pkg taco seasoning
1 lime, zested, juiced
1 pound fish fillets
8 taco shells
Heat grill. In bowl, combine salsa, beans, corn and chives. Set aside. In bowl, stir together taco seasoning, 1 tbs lime juice and 1 tsp lime zest until a paste forms. Let sit 5 min. * Spread seasoning mixture over both sides of fish fillets. Coat fish with cooking spray. Grill until done. Cut fish, divide among taco shells. Top with salsa mixture. SERVE with desired toppings & ENJOY...
