CHOCOLATE PISTACHIO MACAROONS
MAKES 30 MACAROONS.
3 egg whites
1/2 cup sugar
1/8 tsp salt
1/4 tsp almond extract
1/2 cup chopped dried cherries
14 oz pkg sweetened shredded coconut
Melted semisweet chocolate
Chopped pistachios
Heat oven to 325 degrees. Line a baking sheet with parchment. Whisk egg whites, sugar, salt and almond extract in a bowl until combined, fold in cherries and coconut. Scoop tablespoons of coconut mixture onto baking sheet, form into pyramids. Bake until golden brown around edges 25 min. Let cool 10 min. on baking sheet. Dip in melted semisweet chocolate, sprinkle with pistachios, chill until set. SERVE & ENJOY...
