CHICKEN GREENS NOODLE BOWLS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 cup matchstick pieces of cucumber
1 pound ground chicken
3 cloves garlic, grated
1" piece ginger, peeled, grated
1 1/2 tsp ground peppercorns
2 tsp hot sauce
2 tbs canola oil
4 cups low sodium chicken stock
3 tbs light soy sauce
Salt
1 large bunch Swiss chard, stems removed, leaves torn
1 bunch green onions, trimmed, sliced
10 oz egg noodles
Lime wedges
In a bowl, sprinkle cucumbers with salt, toss. Let sit until juices form. In another bowl, combine chicken, garlic, ginger, peppercorns and hot sauce. In a skillet, heat oil. Add chicken mixture, cook until browned and cooked through. Add stock, 1 cup water, soy sauce and salt. Stir. Bring to a simmer, add chard and green onions, stir until chard is wilted. In a pot, cook noodles according to package directions. Divide among bowls. Top with chicken mixture and cucumbers. SERVE with lime wedges & ENJOY...
