BERRY TOPPED CHEESECAKE MOUSSE
MAKES 8 SERVINGS.
8 oz pkg cream cheese
1/2 cup powdered sugar
1 1/2 tsp vanilla
1/2 tsp grated lemon peel
3/4 cup heavy cream, whipped
1 cup graham crackers crumbs
4 tsp sugar
2 tbs butter, melted
Slice strawberries
In a bowl, beat cream cheese, powdered sugar, vanilla and lemon peel until fluffy. Fold in whipped cream. Divide among 8 dessert dishes. Refrigerate 2 hours. Combine cracker crumbs and sugar in a bowl, add butter, mix well. *Press to a 1/4" thickness on an ungreased baking sheet. Bake at 375 degrees for 12 min. or until light golden brown. Cool. Just before serving, crumble graham cracker mixture, sprinkle over mousse, top with berries. SERVE & ENJOY...
