APRICOT HERB PORK
MAKES 8 SERVINGS.
In a bowl, combine 3 tbs minced rosemary, 1 tbs oil, 4 garlic cloves, minced, salt and pepper, brush over pork. In a skillet, brown pork in 2 tbs oil on all sides. Bake at 425 degrees for 15 min. IN a bowl, combine 1 cup apricot preserves, 3 tbs lemon juice and 2 garlic cloves, minced, brush over pork. Bake 15 min. or until done, basting with pan juices. Let stand 5 min. before slicing. SERVE & ENJOY...
