GERMAN POTATO SALAD---MAKES 6 SERVINGS.
Boil 2 1/2 pounds quartered potatoes 20 min. drain. Mix 1/3 cup oil, 3 tbs each grainy mustard and red wine vinegar, and 1 tbs sugar. Toss with potatoes, 2 cups sauerkraut, 3 chopped green onions, 1 tsp caraway seeds, salt and pepper. SERVE & ENJOY...
CHORIZO POTATO SALAD---MAKES 6 SERVINGS.
Boil 2 1/2 pounds sliced potatoes 10 min. drain. Brown 3 sliced chorizo sausages. Mix 1/2 cup each mayonnaise and chopped parsley with 3 tbs red wine vinegar. Toss with potatoes, sausage and 1 cup chopped celery, season with salt, pepper and paprika. SERVE & ENJOY...
