QUICK TILAPIA IN PARCHMENT Makes 4 servings. 2 tbs olive or vegetable oil 4 tilapia fish fillets 2 oz sugar snap peas, halved 1 1/2 tsp Old Bay seasoning Salt and Pepper 3/4 tsp grated lemon peel + 1 1/2 tsp lemon juice 1 1/2 cups frozen corn Heat oven to 425°. Cut out four 12x15" pieces of parchment. In a bowl, combine corn, peas, and lemon peel, season with salt and pepper. Divide mixture among parchment pieces and top with fish. Season fish with Old Bay, then oil and lemon juice. -Bring together the long sides of the parchment and fold over twice, then tuck the short sides under to form a pouch.
