BARLEY AND GREENS GUMBO Makes 4 servings. 1/4 bunch parsley, chopped 5 oz spinach 1/2 bunch Swiss chard, stems and leaves chopped and separated Salt and Pepper 2 ribs celery, finely chopped 1/2 bunch escarole, chopped 1 cup pearl barley, rinsed 3 tbs flour 1 onion, chopped 1/4 cup vegetable oil In a pot or Dutch oven, heat oil. Add celery and onion cook until softened, 5 min. season with salt and pepper. Add flour, cook 5 min. Add chard stems cook 1 min. -Stir in barley and 6 cups water, bring to a boil. Lower heat, cover and simmer until barley is tender, 30 min. Working in batches, add spinach, escarole, parsley and chard leaves, stirring greens until wilted between each addition.
