LEMON VINAIGRETTE GREEN-BEANS
MAKES 8 SERVINGS.
1/3 cup oil
1 tsp lemon zest
1/4 cup lemon juice
1 tbs Dijon mustard
Salt and Pepper
2 pounds green beans, trimmed
In a bowl, whisk together oil, zest, juice, mustard, salt and pepper. Fill a bowl with ice water. Bring a pot of water to a boil. Add salt, then green beans, cook until tender. Drain. Transfer green beans to ice water, drain, set aside. Toss beans in lemon vinaigrette. SERVE & ENJOY...
