YUMMY TACO BUFFET
MAKES 8 SERVINGS. 3 TACOS EACH.
24 corn tortillas
Oil
Meat from 1 bought cooked chicken, warm
2 pounds pulled pork
Assorted toppings---Green salsa, sour cream, guacamole, shredded Monterey Jack cheese, bell pepper strips, lime wedges, chopped onion, chopped lettuce.
Heat oven to 350 degrees. In a dry skillet, warm 12 tortillas. Stack tortillas, wrap in foil. Place in oven 15 min. *POUR oil in a skillet. Fry remaining 12 tortillas until lightly browned. Drain on paper towels, keep at room temp. Shred chicken, place in a bowl, keep warm. Put pork in a bowl, keep warm. *WRAP tortillas from oven in a towel to keep warm. Stack fried tortillas next to them. Let guests assemble their own tacos with chicken, pork and their choice of toppings. SERVE & ENJOY...
