VEGGIES ON TOASTS
MAKES 2 SERVINGS.
8 oz box frozen artichoke hearts, thawed
1/8 cup oil
Salt and Pepper
1/2 of a 14 oz can white beans, drained
1/2 tbs lemon juice
1/4 tsp chopped rosemary
1/8 tsp crushed red pepper
2 slices bread, halved
1 clove garlic, peeled
Heat oven to 375 degrees. Toss artichoke with 2 tbs oil, salt and pepper. Spread on a baking sheet. Roast until crispy 30 min. In a bowl, combine beans and next 3 ingredients and 2 tbs oil. Toss in artichokes. *TOAST bread until golden on both sides. Rub one side of each piece of bread with garlic. Divide artichoke mixture among toasts. SERVE & ENJOY...
