BERRY COMPOTE SLOWCOOKER
MAKES 6 SERVINGS.
COMPOTE---
2 pounds strawberries, hulled
12 oz fresh or frozen diced rhubarb
1 pint raspberries
3/4 cup brown sugar
1/4 cup quick cook tapioca
2 tbs lemon juice
1/2 tsp cardamom
Vanilla ice cream
TOPPING---
1 cup flour
1/2 cup rolled oats
3/4 cup brown sugar
1/4 tsp cinnamon
Pinch of salt
6 tbs unsalted butter
COMPOTE---Coat bowl of a slowcooker with cooking spray. Add first 7 ingredients, stir to combine. Cook on high 3 hours. TOPPING---Heat oven to 375 degrees. In a bowl, combine first 5 ingredients. Cut in butter until crumbs the size of small peas form. Crumble onto a baking sheet. Bake 15 min. or until browned. Uncover slowcooker, let cool 15 min. Spoon into bowls, top with some of the topping. SERVE slightly warm with ice cream & ENJOY...
