MEATY VEGGIE SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 pound potatoes
1 1/4 tsp salt
1/4 cup buttermilk
3 tbs chopped chives
1 1/2 tbs mayonnaise
1 tbs sour cream
1 tsp lemon juice
1 tsp Worcestershire
1 clove garlic, minced
12 oz steak
1/2 tsp pepper
4 cups watercress, stems removed
2 radishes, sliced
1/4 cup diced cheddar cheese
Put potatoes in a pan, cover with water. Stir in 1 tsp salt, bring to a boil. Simmer until potatoes are tender. Drain. Slice potatoes in half lengthwise. In a bowl, whisk together buttermilk, chives, mayo, sour cream, lemon juice, Worcestershire and garlic. *HEAT a grill. Season steak with pepper and remaining salt. Oil grill grates. Grill steak to desired doneness. Transfer steak to a cutting board, let rest 10 min. Slice steak. Arrange watercress, radishes, potatoes and steak on 4 plates. Drizzle salads with dressing, put cheese on top. SERVE & ENJOY...
